  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 pound ground beef
  • 28 ounces diced tomatoes (Whole30 compliant)
  • 4 cups beef broth (Whole30 compliant)
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 2 teaspoons paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 medium sweet potatoes, peeled and diced
  • 1 medium zucchini, diced
  • 1 lime, juiced
  • 2 tablespoons fresh cilantro, chopped

Directions

Step 1

Heat olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes.

Step 2

Add minced garlic, diced red and green bell peppers, and sauté for another 3-4 minutes until softened.

Step 3

Increase heat to medium-high, add the ground beef to the pot, and cook until completely browned. Break the meat up with a wooden spoon as it cooks, about 5-7 minutes.
