  • 2 medium sweet potatoes, peeled and diced
  • 1 15-ounce can crushed tomatoes
  • 4 cups beef broth
  • 2 bay leaves
  • 1 tablespoon fresh thyme
  • 2 tablespoons parsley, chopped

Directions

Step 1

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Season the beef stew meat with salt and black pepper. Add the beef to the pot in batches, searing each batch until browned on all sides, about 5 minutes per batch. Remove the meat and set it aside.
