Ingredients

  • 3 tablespoons olive oil
  • 1 large, diced onion
  • 3 cloves, minced garlic
  • 2 stalks, diced celery
  • 2 medium, sliced carrot
  • 1 diced red bell pepper
  • 1 medium, sliced zucchini
  • 1 14.5 oz can canned diced tomatoes
  • 4 cups fish stock
  • 1 leaf bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 1 pound, cut into bite-sized pieces cod fillets
  • 0.5 pound, peeled and deveined large shrimp
  • 1 pound, cleaned clams
  • 0.25 cup, chopped fresh parsley
  • 1 cut into wedges lemon

Directions

Step 1

In a large pot or Dutch oven, heat olive oil over medium heat.

Add the diced onion to the pot and sauté for about 5 minutes until it begins to soften.

Step 4

Add the sliced zucchini to the pot and cook for an additional 2 minutes while stirring occasionally.

Step 5

Pour in the canned diced tomatoes, fish stock, bay leaf, dried thyme, sea salt, and black pepper. Stir to combine.

Step 6

Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 15 minutes.
