  • 2 tablespoons Olive oil
  • 1 pound Whole30-compliant chicken sausage
  • 1 large Yellow onion
  • 3 medium Carrots
  • 3 Celery stalks
  • 3 Garlic cloves
  • 2 large Russet potatoes
  • 14.5 ounces Diced tomatoes
  • 4 cups Chicken broth
  • 2 Bay leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 cups Kale

Directions

Step 1

Heat a large pot or Dutch oven over medium heat and add the olive oil.

Step 2

Slice the chicken sausage into 1/2-inch rounds. Add to the pot and cook, stirring occasionally, until browned, about 5 minutes. Remove and set aside.

Step 3

While the sausage cooks, dice the onion, peel and slice the carrots, and chop the celery. Mince the garlic.

Add the onion, carrots, and celery into the pot. Sauté for about 5 minutes or until the onion is translucent.
