  • 4 medium red potatoes, cubed
  • 4 cups low-sodium beef broth
  • 1 14.5-ounce can crushed tomatoes
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 bay leaf
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Rinse the beef liver under cold water and pat dry with paper towels. Trim any membranes and slice the liver into bite-sized pieces.

Step 2

In a large pot or Dutch oven, heat 1 tablespoon of ghee over medium heat. Add the liver slices in batches, and sear them until browned on each side, about 2-3 minutes per side. Remove the liver and set aside.
