  • 3 sliced celery stalks
  • 1 medium, chopped red bell pepper
  • 1 medium, chopped zucchini
  • 1 pound, cut into bite-sized pieces boneless, skinless chicken breasts
  • 8 cups chicken broth
  • 1 can (14.5 oz), undrained diced tomatoes
  • 2 bay leaves
  • 1 teaspoon, dried thyme
  • 1 tablespoon, fresh, chopped parsley
  • 1 teaspoon, or to taste salt
  • 0.5 teaspoon, or to taste black pepper
  • 2 cups, fresh spinach

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the chopped onion and sauté for about 5 minutes until it becomes translucent.

Stir in the minced garlic and cook for another minute until fragrant.
