Ingredients

  • 1.5 pounds beef stew meat, cut into 1-inch cubes

  • 0.5 teaspoon black pepper
  • 1 medium yellow onion, chopped
  • 3 units garlic cloves, minced
  • 3 medium carrots, sliced
  • 2 units celery stalks, sliced
  • 1 medium red bell pepper, chopped
  • 1 medium zucchini, diced
  • 14.5 ounces diced tomatoes, no salt added
  • 4 cups beef broth, Whole30 compliant
  • 1 unit bay leaf
  • 1 tablespoon fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

Season the beef cubes with salt and black pepper.

Add the beef to the pot and brown on all sides, about 5-7 minutes. Remove the beef and set aside.
