  • 3 cloves garlic cloves, minced
  • 3 medium carrots, diced
  • 2 stalks celery stalks, diced
  • 1 medium butternut squash, peeled and cubed
  • 4 cups beef broth
  • 1 14-ounce can diced tomatoes
  • 1 bay leaf
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary
  • 2 tablespoons fresh parsley

Directions

Step 1

Cut the beef chuck roast into 1-inch cubes and season with salt and black pepper.

Step 2

In a large Dutch oven or heavy pot, heat olive oil over medium-high heat. Add beef in batches, ensuring not to crowd the pot, and brown on all sides. Remove the beef onto a plate once browned.
