  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 0.25 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 bay leaf
  • 1 sliced for topping avocado
  • 0.25 cup, chopped for garnish fresh cilantro
  • 1 cut into wedges for serving lime

Directions

Step 1

Heat a large pot or Dutch oven over medium-high heat. Add the olive oil.

Once the oil is hot, add the diced onion, green bell pepper, red bell pepper, celery, and carrots. Sauté the vegetables for about 5-7 minutes until they are softened.
