  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 4 cloves garlic
  • 1 pound ground beef
  • 28 ounces canned diced tomatoes
  • 15 ounces canned tomato sauce
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 small zucchini
  • 0.25 cup ciantro
  • 1 whole avocado
  • 1 whole lime

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Dice the onion and bell peppers and mince the garlic cloves.

Step 3

Once the oil is hot, add the onion and cook for about 5 minutes until translucent.

Step 4

Add the bell peppers and minced garlic to the pot. Stir occasionally and cook for another 3 minutes.

Add the ground beef to the pot and cook until browned, breaking it up with a spoon as it cooks to about 5-7 minutes.
