Ingredients

  • 3 pounds beef chuck roast
  • 1 cup pineapple juice
  • 0.5 cup coconut aminos
  • 0.25 cup apple cider vinegar
  • 3 cloves garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons smoked paprika
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons arrowroot powder
  • 2 stalks green onions, sliced
  • 1 cup pineapple chunks
  • 1 sliced red bell pepper

Directions

Step 1

Place the beef chuck roast in a slow cooker.

Step 2

In a mixing bowl, combine pineapple juice, coconut aminos, apple cider vinegar, minced garlic, grated ginger, smoked paprika, sea salt, and black pepper.

Step 3

Pour the mixture over the beef roast in the slow cooker, covering the beef entirely with the marinade.

Step 4

Cover and cook on low for about 8 hours, or until the beef is tender and shreds easily.

Step 5

Once cooked, remove the beef from the slow cooker and shred it using two forks.

Step 6

In a small bowl, mix arrowroot powder with 2 tablespoons of cold water to create a slurry.

Step 7

Add the slurry to the sauce in the slow cooker, stirring constantly until it thickens to create a barbecue sauce.

Step 8

Return the shredded beef to the sauce in the slow cooker, mixing well to coat the beef with the sauce.

Step 9

Add pineapple chunks and sliced red bell pepper to the slow cooker, stir to combine and let them warm through for about 10 minutes.

Step 10

Serve the Hawaiian Barbecue Beef garnished with sliced green onions.
