Ingredients

  • 2 tablespoons Olive oil
  • 1 large, diced Onion
  • 1 large, diced Bell pepper
  • 3 minced Garlic cloves
  • 1 pound Ground pork sausage
  • 4 medium, peeled and grated Russet potatoes
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 1 cup, full-fat, unsweetened Coconut milk
  • 6 large Eggs
  • 3 chopped Green onions
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish with olive oil.

Step 2

In a large skillet over medium heat, heat 2 tablespoons of olive oil. Add the diced onion and bell pepper and sauté until the onion is translucent, about 5 minutes.

Step 3

Add the minced garlic to the skillet and sauté for an additional minute until fragrant.

Step 4

Add the ground pork sausage to the skillet, breaking it up with a wooden spoon, and cook until browned and cooked through, about 7 minutes.

Step 5

Transfer the cooked ingredients to a large mixing bowl. Add the grated potatoes, salt, black pepper, and paprika, and mix until everything is well combined.

In a separate mixing bowl, whisk together the coconut milk and eggs until smooth.
