Ingredients

  • 1 pound ground beef
  • 1 large, diced onion
  • 3 minced garlic cloves
  • 3 large, peeled and sliced carrots
  • 3 sliced celery stalks
  • 3 medium, peeled and diced russet potatoes
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Heat a large pot over medium-high heat and add 1 tablespoon of olive oil.

Step 2

Add the ground beef to the pot and cook until browned, breaking it apart with a spoon. Once cooked, remove the beef from the pot and set aside.

Step 3

In the same pot, add the remaining tablespoon of olive oil. Saute the diced onion and minced garlic until the onion is translucent, about 4-5 minutes.

Add the sliced carrots, celery, and diced potatoes to the pot. Stir well and cook for an additional 5 minutes.
