Ingredients

  • 2 medium Zucchini
  • 2 large Red bell peppers
  • 1 large Red onion
  • 1 pint Cherry tomatoes
  • 8 oz Baby bella mushrooms
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Dried oregano
  • 1 teaspoon Sea salt
  • 0.5 teaspoon Black pepper
  • 8 Wooden or metal skewers

Directions

Step 1

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

Step 2

Wash all the vegetables thoroughly. Slice the zucchini into thick rounds, about 1/2 inch thick.

Step 3

Cut the red bell peppers into 1-inch pieces, discarding the seeds and stem.

Step 4

Peel the red onion and slice it into chunks similar in size to the bell peppers.

Trim the stems from the baby bella mushrooms and leave them whole, unless very large, in which case, halve them.
