Ingredients

  • 3 pieces Large russet potatoes
  • 3 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Dried oregano
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley
  • 2 tablespoons Fresh lemon juice
  • 3 tablespoons Tahini
  • 2 tablespoons Water
  • 1 cup Cherry tomatoes
  • 0.5 cup Red onion
  • 1 cup Cucumber
  • 0.5 cup Kalamata olives

Directions

Step 1

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

Wash and peel the russet potatoes. Cut them into fries, about 1/2 inch thick.

Step 3

In a large bowl, toss the potato fries with olive oil, garlic powder, onion powder, dried oregano, paprika, salt, and black pepper until evenly coated.
