Ingredients

  • 1 cup Raw almonds
  • 1 cup Raw pecans
  • 0.5 cup Raw cashews
  • 0.5 cup Unsweetened shredded coconut
  • 0.5 cup Raw sunflower seeds
  • 0.5 cup Raw pumpkin seeds (pepitas)
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Ground ginger
  • 3 tablespoons Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.

Step 2

In a food processor, pulse the almonds, pecans, and cashews until they are coarsely chopped. Avoid over-processing them; we want small chunks, not a fine powder.

Step 3

Transfer the chopped nuts to a mixing bowl and add the shredded coconut, sunflower seeds, pumpkin seeds, cinnamon, nutmeg, ginger, and salt. Mix everything until well combined.

In a small bowl, whisk together the melted coconut oil and vanilla extract.
