Ingredients

  • 2 cups almond flour
  • 0.25 cup coconut flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 4 large eggs
  • 0.75 cup unsweetened applesauce
  • 0.5 cup full-fat coconut milk
  • 2 teaspoons vanilla extract
  • 0.25 cup coconut oil, melted

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease an 8x8 inch square baking pan with coconut oil or line it with parchment paper.

Step 2

In a large mixing bowl, combine the almond flour, coconut flour, baking soda, and salt. Whisk together until evenly mixed and no lumps remain.

Step 3

In a separate medium bowl, beat the eggs well until they are fluffy. Add the unsweetened applesauce, coconut milk, vanilla extract, and melted coconut oil. Mix until smooth and well-combined.

Step 4

Pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix, which can make the cake dense.

Step 5

Transfer the batter into the prepared baking pan, using a spatula to spread it evenly into the corners and smooth the top.

Step 6

Bake in the preheated oven for about 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 7

Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Step 8

Slice and serve the cake as desired. Enjoy plain or pair with a Whole30 compliant icing or fresh fruits.
