  • 2 cans (20 oz each) Young or unripe jackfruit
  • 16 fl oz Coconut milk
  • 1 medium, chopped Onion
  • 3 cloves, minced Garlic
  • 1 inch piece, minced Ginger
  • 1 medium, sliced Red bell pepper
  • 2 tablespoons (Whole30 compliant) Fish sauce
  • 1 teaspoon Sea salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Coconut oil
  • 2 cups Spinach
  • 1 small, sliced Red chili (optional)

Directions

Step 1

Drain and rinse the canned young jackfruit thoroughly in cold water. Set aside.

Step 2

Heat coconut oil in a large pot over medium heat.

Add the chopped onions and sauté until translucent, about 5 minutes.

Add the minced garlic and ginger, stirring until fragrant, about 1 minute.
