Ingredients

  • 500 grams baby potatoes
  • 3 tablespoons coconut oil
  • 1 teaspoon cumin seeds
  • 0.5 teaspoon mustard seeds
  • 0.5 teaspoon turmeric powder
  • 0.25 teaspoon red chili powder
  • 1 teaspoon fresh ginger, minced
  • 2 garlic cloves, minced
  • 2 tablespoons fresh coriander leaves, chopped
  • 1 teaspoon salt
  • 1 tablespoon fresh lemon juice

Directions

Step 1

Begin by washing the baby potatoes thoroughly to remove any dirt. Do not peel them.

Step 2

Bring a large pot of water to a boil and add the potatoes, cooking until they are just fork-tender, about 8-10 minutes. Drain and set aside to cool slightly.

Step 3

Once the potatoes are cool enough to handle, cut them into halves.

Step 4

In a large non-stick skillet, heat the coconut oil over medium heat.

Step 5

Add the cumin seeds and mustard seeds to the oil. Fry them for about 30 seconds until they start to crackle.

Step 6

Stir in the minced ginger and garlic, sautéing until fragrant, about 1 minute.

Step 7

Add the turmeric powder and red chili powder, and sauté for another 30 seconds.

Step 8

Add the potato halves to the skillet, along with the salt. Toss everything to coat the potatoes evenly with the spices and oil.

Step 9

Cook the potatoes, stirring occasionally, until they turn golden brown and crispy around the edges, about 10-15 minutes.

Step 10

Remove the skillet from the heat and add the fresh coriander leaves. Toss to incorporate.

Step 11

Squeeze the fresh lemon juice over the potatoes and give a final toss.

Step 12

Serve the Aloo Ki Sabji hot as a side dish or a main course. Enjoy your flavorful Whole30 meal!
