Ingredients

  • 1 medium head Cauliflower
  • 250 grams Cherry tomatoes
  • 1 medium Cucumber
  • 1 bunch Fresh parsley
  • 0.5 bunch Fresh mint
  • 3 stalks Green onions
  • 60 milliliters Lemon juice
  • 60 milliliters Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Start by preparing the cauliflower rice. Cut the cauliflower into florets and pulse them in a food processor until they resemble rice grains. You should have about 3 cups of cauliflower rice.
