Shuck the corn and remove all silk threads. Using a sharp knife, carefully cut the kernels off the cobs into a large bowl.
Bring a pot of water to a boil. Add the corn kernels and cook for 2-3 minutes. Drain and let cool completely.
While the corn is cooling, finely chop the red bell pepper and the red onion. Add them to the bowl with corn.
