Ingredients

  • 2 cups almond flour
  • 0.5 cup arrowroot flour
  • 0.25 cup coconut flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup ghee, chilled
  • 2 eggs
  • 1 tablespoon apple cider vinegar
  • 0.25 cup coconut milk

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine almond flour, arrowroot flour, coconut flour, baking soda, and salt. Whisk together until well mixed.

Step 3

Cut the chilled ghee into small cubes and add them to the dry ingredients. Use a pastry cutter or your fingers to work the ghee into the flour mixture until it resembles coarse crumbs.

Step 4

In a separate bowl, whisk together the eggs, apple cider vinegar, and coconut milk until smooth.

Step 5

Pour the wet ingredients into the dry ingredients and gently stir with a spatula until a dough forms. Be careful not to overwork the dough.

Step 6

Scoop out about 1/4 cup of dough and form it into a ball, then slightly flatten it onto the prepared baking sheet. Repeat with the remaining dough, placing biscuits about 1 inch apart.

Step 7

Bake in the preheated oven for 18-20 minutes, or until the biscuits are golden brown on top.

Step 8

Allow biscuits to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or store in an airtight container for up to 3 days.
