  • 1 lb Carrots
  • 2 tbsp Kosher salt
  • 4 cups Water
  • 4 whole Garlic cloves
  • 2 sprigs Fresh dill

Directions

Step 1

Wash and peel the carrots, and then cut them into sticks about 4 inches long and 1/2 inch thick.

In a large mixing bowl, dissolve the kosher salt in 4 cups of cold water to create a brine.

Step 3

Place the carrot sticks upright in a clean glass jar, leaving about an inch of space at the top.

Step 4

Peel the garlic cloves and add them to the jar, distributing them evenly among the carrots.

Step 5

Add the fresh dill sprigs to the jar, tucking them in the sides.

Step 6

Pour the brine over the carrots and herbs until everything is fully submerged.

Step 7

Place a fermentation weight or a small clean jar filled with water on top of the carrots to ensure they remain submerged under the brine.

Step 8

Seal the jar with a lid but do not screw it tightly. Alternatively, you can cover the jar with a clean cloth and secure it with a rubber band.

Store the jar away from direct sunlight at room temperature. Allow the carrots to ferment for 5 to 10 days, tasting them periodically starting on the 5th day.
