Ingredients

  • 1 cup Green lentils
  • 1 small Onion
  • 3 Garlic cloves
  • 1 cup Fresh parsley leaves
  • 1 cup Fresh cilantro leaves
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Salt
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Baking soda
  • 2 tablespoons Olive oil

Directions

Step 1

Rinse the green lentils under cold water. Place in a pot, cover with water, and bring to a boil over medium-high heat.

Step 2

Once boiling, reduce to a simmer and cook for 15-20 minutes or until lentils are tender but not mushy. Drain and let cool.

In a food processor, combine the onion, garlic cloves, parsley, cilantro, cumin, coriander, black pepper, salt, and lemon juice. Pulse until finely chopped.
