Ingredients

  • 15 oz canned chickpeas, drained and rinsed

  • 1 tsp ground coriander
  • 0.25 tsp cayenne pepper
  • 1 tsp sea salt
  • 0.5 tsp baking powder
  • 0.5 cup almond flour
  • 3 tbsp olive oil
  • 4 large lettuce leaves
  • 1 medium tomato, sliced
  • 1 small cucumber, sliced
  • 1 medium avocado, sliced
  • 0.5 cup Whole30-compliant tahini sauce

Directions

Step 1

In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, cayenne pepper, salt, and baking powder. Pulse until the mixture is finely chopped but not pureed.

Transfer the mixture to a large bowl and stir in the almond flour, mixing well to combine.
