Ingredients

  • 6 Whole30 compliant sausages
  • 2 tablespoons Coconut oil
  • 1 medium Onion, diced
  • 3 Garlic cloves, minced
  • 1 tablespoon Fresh ginger, minced
  • 2 medium Carrots, sliced
  • 1 large Red bell pepper, sliced
  • 2 tablespoons Curry powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 400 ml Canned coconut milk
  • 250 ml Chicken broth
  • 1 medium Zucchini, diced
  • 2 cups Baby spinach
  • 0.5 cup Cilantro leaves, chopped
  • 0 to taste Salt
  • 0 to taste Black pepper
  • 4 Lime wedges

Directions

Step 1

Heat 1 tablespoon of coconut oil in a large skillet over medium heat.

Step 2

Add the sausages to the skillet and brown them on all sides, about 6-8 minutes. Remove and set aside.

In the same pan, add the remaining tablespoon of coconut oil, diced onion, and a pinch of salt. Cook until the onion is translucent, about 5 minutes.
