Ingredients

  • 500 grams Baby bella mushrooms
  • 60 grams Arrowroot powder
  • 60 ml Coconut aminos
  • 2 cloves Garlic, minced
  • 1 Fresh red chili, finely chopped
  • 1 teaspoon Ground ginger
  • 2 tablespoons Sesame oil
  • 4 tablespoons Extra virgin olive oil
  • 2 tablespoons Fresh cilantro, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

1. Clean the mushrooms with a damp cloth to remove dirt and pat them dry. Cut larger mushrooms in half to ensure even cooking.

Step 2

2. In a bowl, toss the mushrooms with 1 teaspoon of salt, 0.5 teaspoon of black pepper, and arrowroot powder until they are evenly coated.

3. Heat 4 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the mushrooms in a single layer. Cook them in batches if necessary, turning occasionally, until they are golden brown and crispy on all sides, about 10 minutes. Remove mushrooms to a plate lined with a paper towel and set aside.

4. In the same skillet, reduce the heat to medium, and add 2 tablespoons of sesame oil. Add minced garlic, chopped red chili, and ground ginger. Sauté until aromatic, about 1-2 minutes.
