Ingredients

  • 1 pound Chicken tenders
  • 1 cup Almond flour
  • 0.5 cup Coconut flour
  • 2 teaspoons Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 large Eggs
  • 0.25 cup Coconut milk
  • 0.25 cup Coconut oil
  • 4 Fresh lemon wedges

Directions

Step 1

Preheat the oven to 425°F (220°C).

Step 2

Line a baking sheet with parchment paper and set aside.

Step 3

In a shallow dish, mix together the almond flour, coconut flour, paprika, garlic powder, onion powder, salt, and black pepper.

Step 4

In another shallow dish, whisk together the eggs and coconut milk until well combined.

Step 5

Heat a large non-stick skillet over medium heat and add the coconut oil.

Step 6

While the oil heats, dip each chicken tender first into the egg mixture, allowing any excess to drip off, then coat it in the flour mixture, pressing the coating onto the chicken to adhere.
