Ingredients

  • 4 cups mixed salad greens (such as romaine, spinach, and arugula)
  • 1 medium cucumber
  • 1 large avocado
  • 4 small radishes
  • 1 cup cherry tomatoes
  • 1 large lemon
  • 0.25 cup extra-virgin olive oil
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the mixed salad greens thoroughly under cold water and spin dry in a salad spinner or pat dry with paper towels. Place them in a large salad bowl.

Step 2

Slice the cucumber in half lengthwise, then slice into thin half moons. Add the cucumber to the salad bowl.

Step 3

Cut the avocado in half and remove the pit. Slice into cubes and add to the salad.

Step 4

Thinly slice the radishes and add them to the salad bowl.

Step 5

Halve the cherry tomatoes and add them to the salad.

Step 6

To make the lemon vinaigrette, first zest the lemon and then juice it. You should have about 3 tablespoons of juice.

Step 7

In a small bowl, whisk together the lemon juice, lemon zest, olive oil, Dijon mustard, salt, and black pepper until well combined and emulsified.

Step 8

Drizzle the vinaigrette over the salad and toss gently to combine, ensuring all the ingredients are evenly coated.

Step 9

Serve immediately as a refreshing side dish or a light main course.
