Ingredients

  • 2 sweet potatoes (medium)
  • 4 tablespoons olive oil
  • 300 grams cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 120 ml coconut milk
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat your oven to 400°F (200°C).

Wash and peel the sweet potatoes. Slice them into 1/2-inch thick rounds to resemble toast slices.

Place the sweet potato slices on a baking sheet, brush both sides with 2 tablespoons of olive oil, and season with a pinch of salt and pepper.
