Ingredients

  • 2 pieces Chicken breasts
  • 3 large Zucchini
  • 3 cups Fresh spinach
  • 1 cup Raw cashews
  • 1.5 cups Water
  • 2 cloves Garlic
  • 2 tablespoons Lemon juice
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Onion powder
  • 0.5 cup Fresh basil leaves

Directions

Step 1

Start by preparing the cashew cream sauce. Soak the raw cashews in hot water for at least 15 minutes.

Step 2

While the cashews are soaking, slice the chicken breasts into thin strips.

Step 3

Spiralize the zucchini into noodles using a spiralizer. Alternatively, you can purchase pre-made zucchini noodles.

Step 4

In a blender, combine the soaked cashews (drained), 1.5 cups of water, garlic cloves, lemon juice, salt, and ground black pepper. Blend until smooth and creamy. Set aside.

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken slices, season with salt, pepper, and onion powder, and cook until golden brown and cooked through, about 5-6 minutes. Remove chicken from the skillet and set aside.
