Start by preparing the cashew cream sauce. Soak the raw cashews in hot water for at least 15 minutes.
While the cashews are soaking, slice the chicken breasts into thin strips.
Spiralize the zucchini into noodles using a spiralizer. Alternatively, you can purchase pre-made zucchini noodles.
In a blender, combine the soaked cashews (drained), 1.5 cups of water, garlic cloves, lemon juice, salt, and ground black pepper. Blend until smooth and creamy. Set aside.
