Ingredients

  • 2 pounds carrots
  • 2 garlic cloves
  • 3 tablespoons extra virgin olive oil
  • 1 cup coconut cream
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Peel and cut the carrots into 1-inch pieces for even cooking.

Step 2

Peel the garlic cloves and leave them whole.

Step 3

Bring a large pot of water to a boil. Add a pinch of salt to the water.

Step 4

Add the carrot pieces and garlic cloves to the boiling water. Cook for approximately 20-25 minutes, or until the carrots are very tender and easily pierced with a fork.

Drain the carrots and garlic thoroughly in a colander and return them to the pot.
