Ingredients

  • 1 pound chicken thighs, boneless and skinless
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 medium carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 3 garlic cloves, minced
  • 1 medium white sweet potato, peeled and diced
  • 4 cups chicken broth
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and set aside.

Step 2

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

Step 3

Add the chicken pieces to the pot, season with a bit of salt and pepper, and cook until browned on all sides, about 5-7 minutes. Once browned, remove the chicken from the pot and set it aside.

In the same pot, add the diced onion, sliced carrots, and sliced celery. Cook for about 5 minutes, stirring occasionally, until the vegetables are beginning to soften.
