Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil

  • 3 medium carrots, sliced
  • 3 pieces celery stalks, sliced
  • 2 large zucchini, spiralized
  • 8 cups chicken broth, low-sodium
  • 1 piece bay leaf
  • 1 teaspoon fresh thyme
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 3–4 minutes until translucent.

Add the minced garlic and cook for an additional minute until fragrant.
