Ingredients

  • 500 grams fresh cod fillets
  • 60 grams almond flour
  • 2 large eggs
  • 2 medium green onions, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 tablespoons avocado oil

Directions

Step 1

Begin by rinsing the cod fillets under cold running water and then patting them dry with a paper towel. Cut the cod into small chunks and place in a bowl.

In a food processor, add the cod chunks and pulse until finely chopped, but not fully pureed.

Transfer the chopped cod into a large mixing bowl. Add almond flour, beaten eggs, finely chopped green onions, minced garlic, chopped parsley, lemon zest, salt, and black pepper. Mix until all ingredients are well combined.

Using your hands, shape the mixture into small patties, approximately 2 inches in diameter.
