Ingredients

  • 4 medium sweet potatoes
  • 3 tablespoons ghee
  • 1 small onion
  • 2 cloves garlic
  • 1 teaspoon ginger
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 0.5 teaspoon cumin powder
  • 0.5 teaspoon turmeric powder
  • 0.25 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 2 tablespoons fresh cilantro
  • 1 cup green peas
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pierce the sweet potatoes with a fork and bake them on a baking sheet for 45 minutes or until tender. Allow them to cool, then peel and mash the flesh until smooth.

In a large skillet, heat 2 tablespoons of ghee over medium heat.

Add the diced onion, minced garlic, and ginger. Sauté until the onion becomes translucent.

Stir in the cumin seeds, coriander powder, cumin powder, turmeric, cayenne pepper, and salt. Cook for an additional minute until fragrant.
