Ingredients

  • 3 tablespoons tomato paste
  • 1 cup apple cider vinegar
  • 1 cup olive oil
  • 4 units medjool dates, pitted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt
  • 0.5 teaspoon mustard powder
  • 0.5 cup water

Directions

Step 1

In a small bowl, soak the pitted medjool dates in warm water for about 10 minutes to soften them, then drain.

Step 2

In a blender, combine the tomato paste, apple cider vinegar, olive oil, softened dates, garlic powder, onion powder, smoked paprika, black pepper, salt, mustard powder, and water.

Step 3

Blend the mixture on high speed until smooth and creamy. You may need to stop the blender and scrape down the sides occasionally to ensure all ingredients are evenly incorporated.

Step 4

Taste the dressing and adjust seasonings as needed, adding a bit more salt or vinegar if desired.

Step 5

Transfer the dressing to a jar or airtight container and refrigerate until ready to use. The dressing can be stored in the refrigerator for up to a week.

Step 6

Shake well before using, as separation may occur.
