Ingredients

  • 1 small head Green cabbage
  • 2 large Carrots
  • 0.5 medium Red onion
  • 0.5 cup Apple cider vinegar
  • 0.25 cup Olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Celery seed
  • 1 teaspoon Sea salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Remove the outer leaves of the cabbage and cut it in half. Trim out the core and finely shred the cabbage using a sharp knife or a mandoline slicer. Place the shredded cabbage in a large mixing bowl.

Step 2

Peel and grate the carrots using a box grater or food processor. Add the grated carrots to the bowl with the cabbage.

Step 3

Thinly slice the red onion and add it to the cabbage mixture. Gently toss these vegetables together until well combined.

Step 4

In a separate small bowl, whisk together the apple cider vinegar, olive oil, Dijon mustard, celery seed, sea salt, and black pepper to form the dressing.
