Ingredients

  • 2 tablespoons Extra virgin olive oil
  • 1 medium (finely chopped) Onion
  • 4 minced Garlic cloves
  • 1 medium (finely grated) Carrot
  • 1 stalk (finely chopped) Celery
  • 28 ounces Canned whole tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Crushed red pepper flakes
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons (chopped) Fresh parsley

Directions

Step 1

Heat the extra virgin olive oil in a large saucepan over medium heat.

Step 2

Add the chopped onion and sauté for about 5 minutes until it becomes translucent and soft.

Add the minced garlic, grated carrot, and chopped celery, and cook for another 3-4 minutes until the vegetables are softened and fragrant.
