  • 0.25 cup Fresh lemon juice
  • 0.25 cup Extra-virgin olive oil
  • 1 small Garlic clove
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Begin by preparing the cauliflower rice. Remove the leaves and core from the cauliflower. Break it into florets and wash thoroughly.

Using a food processor, pulse the cauliflower florets in batches until they resemble fine grains similar to bulgur. Set aside.

Dice the cherry tomatoes into small pieces. Peel the cucumber, cut it in half lengthwise, remove any seeds, and chop it into small uniform pieces.
