Ingredients

  • 1 pound beef sirloin, thinly sliced
  • 0.25 cup coconut aminos
  • 1 tablespoon sesame oil
  • 1 tablespoon arrowroot powder
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 red bell pepper, sliced
  • 2 cups broccoli florets
  • 1 cup carrots, thinly sliced
  • 2 green onions, sliced
  • 2 tablespoons cooking fat (such as clarified butter or coconut oil)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

In a medium-sized bowl, combine the thinly sliced beef, coconut aminos, sesame oil, arrowroot powder, minced garlic, and minced ginger. Mix well to coat the beef evenly. Set aside to marinate for at least 15 minutes, preferably in the refrigerator.

Step 2

While the beef is marinating, prepare the vegetables by slicing the bell pepper and green onions, and cutting the broccoli into florets and carrots into thin slices.

Step 3

Heat 1 tablespoon of the cooking fat in a large skillet or wok over medium-high heat.

Step 4

Add the marinated beef to the skillet in a single layer. Stir-fry for about 3-4 minutes, or until the beef is browned but not fully cooked through. Remove the beef from the skillet and set aside.

Step 5

In the same skillet, add the remaining tablespoon of cooking fat. Add the sliced red bell pepper, broccoli florets, and sliced carrots. Stir-fry the vegetables for about 5-6 minutes, or until they are crisp-tender.

Step 6

Return the beef to the skillet, along with any accumulated juices. Stir in the sliced green onions.

Step 7

Season the stir-fry with salt and black pepper, adjusting to taste. Stir everything together and cook for an additional 2-3 minutes, until the beef is cooked through and the vegetables are fully coated in the sauce.

Step 8

Remove the skillet from heat. Serve the stir-fried beef hot, garnishing with extra green onions if desired.
