Ingredients

  • 2 pounds chicken thighs
  • 2 tablespoons olive oil
  • 1 large onion
  • 4 cloves garlic cloves
  • 3 medium carrots
  • 2 celery stalks
  • 14.5 ounces canned diced tomatoes
  • 2 cups chicken broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh parsley

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Step 2

Season the chicken thighs with salt and pepper, then add them to the pot. Brown the chicken pieces on both sides, about 5 minutes per side. Remove the chicken and set aside.

Step 3

In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes, or until the vegetables begin to soften.

Step 4

Add the canned diced tomatoes, chicken broth, bay leaves, thyme, oregano, additional salt, and pepper to the pot. Stir to combine.

Step 5

Return the chicken thighs to the pot, ensuring they are mostly submerged in the liquid.

Step 6

Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let the chicken stew for about 30-35 minutes, or until the chicken is cooked through and tender.

Step 7

Remove the bay leaves before serving. Adjust seasoning with more salt and pepper if needed.

Step 8

Garnish with chopped fresh parsley and serve warm.
