Ingredients

  • 1 large Spaghetti squash
  • 2 tablespoons Olive oil
  • 1 pound Ground beef or turkey
  • 1 medium, diced Onion
  • 3 minced Garlic cloves
  • 1 28-ounce can Crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup, chopped Fresh parsley

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Carefully slice the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the inside of the squash with 1 tablespoon of olive oil and season with a pinch of salt and pepper.

Step 3

Place the squash halves cut side down on a baking sheet and roast in the preheated oven for about 40-45 minutes, or until the squash is tender and easily pierced with a fork.

Step 4

While the squash is roasting, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and sauté for 4-5 minutes until translucent.

Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.

Add the ground meat to the skillet and cook, breaking it apart with a spatula, until browned and cooked through, about 7-10 minutes.
