Ingredients

  • 4 medium russet potatoes
  • 3 tablespoons ghee
  • 0.25 cup almond milk
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 medium celery stalks, diced
  • 3 medium garlic cloves, minced
  • 1.5 pounds ground beef
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce (Whole30-compliant)
  • 1 cup beef broth
  • 1 cup green beans, chopped
  • 0.5 teaspoon black pepper
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped

Directions

Step 1

Peel and quarter the potatoes. Place them in a large pot, cover with water, and bring to a boil. Cook until tender, about 15 minutes. Drain well.

Step 2

Mash the potatoes with ghee and almond milk until smooth. Season with salt and set aside.

Step 3

Preheat the oven to 400°F (200°C).

Step 4

In a large skillet, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Cook until the vegetables are softened, about 8-10 minutes.

Step 5

Add minced garlic to the skillet and cook for an additional 1 minute.

Step 6

Increase heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it up with a spoon as it cooks, about 8 minutes.

Step 7

Stir in tomato paste and Worcestershire sauce, combining well.

Step 8

Pour in beef broth and bring to a simmer. Reduce heat to low and let simmer until the mixture thickens slightly, about 5-7 minutes.

Step 9

Stir in chopped green beans, black pepper, rosemary, and thyme. Cook for another 3-5 minutes until the beans are tender.

Step 10

Transfer the beef and vegetable mixture to a 9x13-inch baking dish. Spread the mashed potatoes evenly over the top.

Step 11

Place the baking dish in the preheated oven and bake for 20 minutes, or until the mashed potatoes are lightly browned.

Step 12

Let the shepherd's pie rest for a few minutes before serving.
