Ingredients

  • 1 pound Large prawns, peeled and deveined
  • 4 cups Water
  • 1 Lemon, halved
  • 1 Bay leaf
  • 1 teaspoon Whole black peppercorns
  • 0 Ice, as needed
  • 0.5 cup Whole30 compliant tomato puree
  • 2 tablespoons Horseradish, grated
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Hot sauce, Whole30 compliant
  • 0.5 teaspoon Sea salt
  • 1 Avocado, sliced
  • 1 tablespoon Fresh dill, chopped
  • 4 Lettuce leaves for serving

Directions

Step 1

Bring 4 cups of water to a boil in a medium-sized pot. Add the halved lemon, bay leaf, and peppercorns.

Step 2

Once boiling, add the prawns to the pot and cook until they are pink and opaque, approximately 2-3 minutes.

Step 3

Remove the prawns with a slotted spoon and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool completely.
