Ingredients

  • 2 cups Almond flour
  • 2 tablespoons Coconut flour
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Sea salt
  • 1 large Egg
  • 0.5 cup Melted coconut oil
  • 1 teaspoon Vanilla extract
  • 0.5 cup Raisins (optional)
  • 0.5 cup Chopped nuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together almond flour, coconut flour, ground cinnamon, baking soda, and sea salt until well combined.

Step 3

In a separate medium bowl, whisk the egg until well beaten. Then mix in melted coconut oil and vanilla extract until fully incorporated.

Step 4

Pour the wet ingredients into the dry mixture and stir until a dough forms. If adding raisins or nuts, gently fold them into the dough until evenly distributed.

Step 5

Scoop out dough using a tablespoon measure and place onto the prepared baking sheet, leaving about 2 inches between each cookie. Gently press down the tops to flatten slightly.

Step 6

Bake in the preheated oven for about 10 minutes, or until the cookies are golden brown around the edges.

Step 7

Remove from the oven and let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Step 8

Enjoy these Whole30-friendly cookies as a delightful snack or dessert, keeping them stored in an airtight container for up to a week.
