Ingredients

  • 1 pound beef chuck, cut into 1-inch cubes
  • 2 tablespoons coconut oil
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 14 ounces canned diced tomatoes
  • 1 cup coconut milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh cilantro, chopped

Directions

Step 1

Heat the coconut oil in a large pot over medium-high heat.

Step 2

Add the diced onion and sauté until it becomes translucent, about 5-7 minutes.

Step 3

Stir in the minced garlic and ginger, and cook for an additional minute until fragrant.

Step 4

Add the curry powder, cumin, and coriander to the pot, stirring constantly for another minute to toast the spices.

Step 5

Add the beef cubes to the pot, stirring to coat them in the spice mixture. Cook until they are browned on all sides, about 5-7 minutes.

Step 6

Pour in the canned diced tomatoes and coconut milk, and stir to combine.

Step 7

Season with salt and black pepper.

Step 8

Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer gently for about 45 minutes, or until the beef is tender.

Step 9

Stir occasionally to ensure the bottom does not stick and burn.

Step 10

Once the beef is tender, adjust seasoning to taste, and stir in the chopped cilantro before serving.

Step 11

Serve hot, garnished with additional cilantro if desired.
