Ingredients

  • 2 pounds Russet potatoes
  • 3 tablespoons Ghee
  • 0.5 cup Coconut milk
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Fresh chives (optional, for garnish)

Directions

Step 1

Peel the potatoes and cut them into evenly sized chunks, approximately 1 to 2 inches in size to ensure even cooking.

Step 2

Place the potato chunks in a large pot and cover them with cold water. Add a pinch of salt to the water.

Step 3

Bring the water to a boil over medium-high heat, then reduce the heat and let the potatoes simmer until they are tender and easily pierced with a fork, about 15 to 20 minutes.

Step 4

While the potatoes are cooking, warm the coconut milk in a small saucepan on low heat. This will help it blend more smoothly into the potatoes.

Step 5

Once the potatoes are cooked, drain them thoroughly in a colander and return them to the same pot.

Step 6

Add the ghee into the pot with the drained potatoes and let it melt in the residual heat from the potatoes.

Step 7

Begin mashing the potatoes with a masher or use a hand mixer for a smoother texture.

Step 8

Slowly add the warmed coconut milk while continuing to mash or mix until the potatoes reach your desired consistency.

Step 9

Stir in the garlic powder, salt, and black pepper, adjusting the seasonings to taste.

Step 10

Transfer the mashed potatoes to a serving bowl. If desired, garnish with freshly chopped chives before serving.
