Ingredients

  • 1 large head green cabbage
  • 2 medium carrots
  • 0.5 small red onion
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon celery seed
  • 0.5 teaspoon sea salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Cut the green cabbage in half and remove the core. Thinly slice the cabbage or use a mandolin for uniform slices. Place the sliced cabbage in a large mixing bowl.

Step 2

Peel the carrots and grate them using a cheese grater or food processor. Add the grated carrots to the bowl with the cabbage.

Step 3

Halve the red onion and slice it thinly. Add the sliced onions to the bowl with the cabbage and carrots.

Step 4

In a separate small mixing bowl, combine the Whole30 compliant mayonnaise, apple cider vinegar, Dijon mustard, celery seed, sea salt, and black pepper. Whisk until you have a smooth dressing.

Step 5

Pour the dressing over the cabbage, carrot, and onion mixture.

Step 6

Using tongs or clean hands, toss the vegetables and dressing together until the coleslaw is well coated.

Step 7

Taste the coleslaw and adjust seasoning if necessary with additional salt or pepper.

Step 8

Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld together.

Step 9

Before serving, give the coleslaw a final toss and transfer to a serving dish.
