Ingredients

  • 4 pounds whole chicken
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh sage
  • 4 large garlic cloves
  • 1 whole lemon
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 large onion
  • 2 large carrots
  • 2 large celery stalks
  • 1 cup chicken broth

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Pat the chicken dry with paper towels to ensure a crispy skin.

Step 3

Place the chicken on a roasting pan or oven-safe skillet.

Step 4

In a small bowl, mix the olive oil, chopped rosemary, thyme, and sage.
